Bata as gemas com o a\u00e7\u00facar e a \u00e1gua at\u00e9 obter um creme esbranqui\u00e7ado.<br \/>\nDerreta a manteiga com o chocolate em banho maria. Incorpore-os nas gemas. Junte a farinha e o sal, mexa bem.<br \/>\nDe seguida adicione gradualmente o leite, e por \u00faltimo a raspa.<br \/>\nBata as claras em castelo e junte-as delicadamente ao preparado anterior com a ajuda de uma vara de arames.<br \/>\nVerta na forma e alise a superf\u00edcie com uma faca. Vai ao forno a cozer durante 50 minutos. Ao sair do forno o bolo n\u00e3o est\u00e1 completamente firme. Antes de o desenformar, o bolo tem de ir ao frigor\u00edfico durante pelo menos 2 horas.
